Steakhouse Garlic Butter Steak Bites

Method

  1. Dry and season

    Pat the steak cubes very dry with paper towels and season with salt and pepper.

  2. Heat the pan

    Heat the oil in a large cast-iron skillet over high heat until it just begins to smoke.

  3. Sear in batches

    Add half the steak in a single layer and sear 1½ to 2 minutes per side until deeply browned. Medium-rare is about 130°F. Transfer to a plate and repeat.

  4. Make the garlic butter

    Lower the heat to medium. Add the butter, garlic and herbs and stir 30 seconds until fragrant.

  5. Toss and rest

    Return the steak to the pan and toss in the butter. Rest 3 minutes, then finish with parsley and flaky salt.

Kitchen notes

  • A hot pan and dry steak are the two keys to a real sear.
  • Don't crowd the pan or the steak will steam instead of brown.
  • Serve with mashed potatoes or garlic bread to soak up the butter.
